This year we had not 1 but 2 Thanksgiving meals. On Thanksgiving day we had my husbands family over. It was good seeing them all together as we haven’t been together since August which was for my nephews birthday. We had to do a lot of cooking that day since some can not eat foods containing gluten. We finally had a turducken this year which made my husband very happy. I didn’t really like it but then again I don’t like turkey. The turducken doesn’t hold together well so essentially you just have 3 separate pieces of meat and stuffing. Besides the turducken I did a gluten free slow cooked turkey breast, gluten free green bean casserole (We substituted funyuns for the topping instead) , gluten free yams, gluten free stuffing, gluten free gravy, gluten free cranberry sauce (I did not add Grand Marnier), pumpkin pie and homemade whip cream. We had a nice time catching up.

Then today we had Thanksgiving with my family. Our Thanksgiving was different from the other. Thankfully no turkey!! We instead had pernil (roast pork shoulder), arroz con gandules (rice with pigeon peas), pasteles, potato salad, candied yams, guacamole salad, tembleque (coconut pudding), homemade strawberry cheesecake and cherry cheesecake. We had a lot of fun. It had been years since we had all gotten together like this.

Now after all that cooking and getting the apartment ready I am in need of some relaxation!!
